INGREDIENTS FOR paste

  • ½ tsp ghee or oil

  • 1 bowl green peas

  • Coriander leaves

  • Little Ginger 

  • Few green chillies 

INSTRUCTIONS

  • Heat ghee/oil in a pan 

  • Roast the  green peas for a few minutes ( without water ) 

  • Grind coriander, ginger and green chillies to paste 

  • Cool and grind( pound)  peas to a coarse paste 

INGREDIENTS FOR FILLING

  • I tsp ghee /oil

  • ½ tsp cumin seeds 

  • 2 pinch of hing 

  • 1 tsp coriander powder 

  • 1 tsp Kashmiri chilli powder 

  • ½ tsp chilli flakes 

  • ¼ tsp turmeric powder

  • 1 tsp mango powder 

  • ½ tsp roasted cumin seed powder 

  • ½ tsp garam masala powder

  • Salt 

  • 1 tsp fennel seed powder 

  • 2 tsp besan

  • ½ tsp sugar 

  • Water 

INSTRUCTIONS 

  • Heat ghee/oil  in a pan and add cumin and hing 

  • Add all the powders to the pan and roast on low flame 

  • Add besan and continue to roast the mixture until aromatic for at least 3-4 mins

Add the green peas coarse paste and the coriander paste

Continue to roast for a few more mins 

  • Add sugar and mix well 

  • Remove and cool

  • Make lemon sized balls 

INGREDIENTS FOR DOUGH

  • 2cups maida 

  • Salt to taste 

  • ¼ cup oil 

  • Water as required 

INSTRUCTIONS

  • In a bowl mix flour, salt and oil 

  • Rub the mix well with your palms

Now add water as needed and knead to make a soft dough 

  • Add little oil to the surface 

  • Rest well for at least 30-45 mins 

  • Now knead the dough with little oil once again 

  • Make balls ( slightly bigger than the filling balls previously prepared)

LET'S MAKE KACHORIS

  • flatten dough ball with hands

  • Stuff the green peas filling ball in it and shape them

Removes excess dough if any 

  • Make all kachori balls

Heat oil in a kadhai on very low heat ( 3-4 mins only) 

  • Flatten each kachori within palms

Add 4-5 kachoris into the oil ( joint part goes towards the bottom of the pan)

Gently move kachoris after few mins 

  • Turn kachoris only when they rise up

Fry them until golden brown on both sides. It takes at least 20 mins for one batch of kachoris 

  • Remove 

  • Switch off the gas and allow oil to cool down before adding the next batch of kachoris 

  • That’s it, your delicious kachoris are ready

Enjoy with ADRAK WALI  chai, chutney or with alu ki subji
