MASOOR DAL AUR BAINGAN

INGREDIENTS 

  • 1 cup masoor dal, soaked

1eggplant( baingan) chopped

  • Few green chillies

  • 1-2 onions, chopped

  • 2-3 tomatoes, chopped 

  • 2tsp ginger garlic paste 

  • Red chilli powder

  • Coriander powder

  • Cumin powder 

  • Salt to taste 

  • Turmeric powder 

  • Garam masala powder 

  • 1-2 tbsp Dahi ( optional) or amchoor powder 

  • Coriander leaves, chopped for garnish 

  • Mustard Oil 

  • Water 

INSTRUCTIONS

  • heat oil in a kadhai

  • Add onion and ginger-garlic paste and fry until translucent 

  • Add tomatoes and continue to fry until softened 

  • Add powdered masalas and fry for a few more minutes 

  • Add dahi and mix well 

  • Add eggplant and fry for 1-2 minutes

Add masoor dal and water and mix well

Cover and simmer on low flame until daal is completely softened

Give tadka with ghee, green chillies, jeera,hing and Kashmiri red chilli powder

Garnish with coriander leaves and that’s it 

  • Serve it hot with rotis, rice
