LOHRI SPECIAL - GUR PARE OR GUD PARA Tea time snackVegetarian recipesdessertsDiwali dessertseggless desserts 21 Jan Written By Shilpa Anand Traditional Punjabi sweet made during festivals like Lohri INGREDIENTS2cups maida¼ cup ghee( melted) ½ tsp baking powderPinch of salt 100 ml warm water ( or less) Oil for frying 2cups jaggery ( crushed)1-2 tbsp water 1tbsp fennel seeds1tbsp ghee ( optional) INSTRUCTIONSTake flour in a bowl and add melted gheeMix the flour and ghee very well Now add a pinch of salt, baking powder Slowly add warm water to make a stiff dough ( not too soft and not necessary to knead it for a long time) Just bring the dough together and leave aside covered for 30 mins Roll it out ( not too thin) and cut into desired shape Heat oil on low Drop the first batch of Paras into the oil and let it cook ( it takes at least 8-10 mins for them to cook fully) until they are golden brown in colour Remove and keep aside Now in another pan melt the jaggery with 1-2 tbsp water and allow it to melt on a low flame Keep stirring Once the jaggery starts to bubble (check for 2 string consistency or add few drops in water.. it should harden immediately)add the fennel seeds Now add the Paras to the jaggery and stir gently in order to coat each piece well Switch off the flame, transfer to another plate and let the gud paras cool down completely You can separate them while they are still warm for better presentation And you are done Your Lohri special Gud Paras are ready Happy lohri Shilpa Anand
