SECO DE POLLO( Ecuadorian chicken stew ) ChickenStewsCurries 22 Jan Written By Shilpa Anand 1kg chicken, cleaned and cut 4-6 tsp of Dry rub( salt, pepper, cumin powder, paprika) 3-4 tbsp of achiote oil ( substitute it with oil with paprika) 2-3 tomatoes, cut 1onion, cut into chunksCilantro or coriander, chopped4-6 cloves of garlic 1-1.5 cups of beer ( not dark) ½ cup Naranjilla fruit juice ( substitute with a mix of orange juice and lemon juice) 2-3 tsp of Aji pepper Seco( mix onion powder, chilli powder, achiote PWD, rice powder and salt ) INSTRUCTIONSMARINATE chicken with the dry rub for 30-45 mins Grind together onion, tomatoes, garlic, coriander leaves and bell peppers into a purée Heat Achiote oil in a pan Add onion, garlic ,bell pepper , coriander stems and fry for few mins Add chicken and fry for few mins until slightly browned on all sides Now add the ground onion purée Add aji seco powder and salt Add orange juice,beer and simmer on low flame for almost an hour You can add potatoes half way if desired Add coriander leaves and cook until gravy thickens That’s it , your easy Ecuadorian chicken stew is ready Serve hot with Avocado, fried plantains salad and yellow rice ( I’ve served it with fried sweet potatoes) Enjoy!SPICE LEVEL:🌶🌶 Shilpa Anand
