KULCHA Indian breadsIndian RecipesVegetarian recipesbread 25 Feb Written By Shilpa Anand INGREDIENTS 2 cups all-purpose flour or maida½ tsp salt1 tbsp oil ¼ cup yogurt 2 tsp sugar 1 tsp yeast ( or ½ baking soda+ ½ tsp baking powder)Coriander leavesNigella seeds Butter INSTRUCTIONSMix everything except Nigella seeds and coriander leaves to make a very soft, sticky dough Grease, Cover and Rest the dough for at least 1-2 hours until it doubles Take out a small ball of dough ( you should be able to make 7-8 dough balls) Add dry flour to the surface and roll it gently. You can just stretch it out instead of using a rolling pin Add little water to the surface of the rolled out roti and add some nigella seeds and coriander leaves Heat up a pan on medium flame Add kulcha to the hot pan with nigella seeds surface on the top splash a few drops of water around the pan and cover and cook kulcha for 2-3 minutes on that side Apply butter on the surface Now flip the side and apply butter Roast well until golden spots appear and kulcha is cooked thorouglyThat’s it, your Kulchas are ready EnjoyI’ve served them with Amritsari Nutri and salad Amritsari Nutrela recipe is on another post Shilpa Anand
