Meen Illatha meen curry 

Vegan/vegetarian curry 

INGREDIENTS

  • coconut oil 

  • ½ tsp fenugreek seeds 

  • 1tsp Ginger

  • 4-5 Shallots

  • ½ onion sliced 

  • 2-3 green chillies

  • 1-2 tomatoes, chopped

  • 1cup grated coconut 

  • ¼ tsp turmeric powder

  • ½ tsp coriander powder

  • 2-3 tsp of  Shilpa's Masala mill Everyday Masala 

  • 2-3 shallots 

  • 2-3 tbsp tamarind juice 

  • Curry leaves

  • Salt as needed

  • Water 

  • ¼ -½ tsp mustard seeds 

  • 1-2 dry Red chillies, broken 

INSTRUCTIONS

  • heat oil in a kadhai 

  • Add fenugreek seeds, ginger and fry for a minute 

  • Add shallots and fry for 1-2 mins 

  • Add sliced onion and continue to fry until onions are browned well 

  • Add green chillies and tomatoes 

  • Add salt and fry until tomatoes soften 

  • Grind the grated coconut with turmeric powder, a few shallots, coriander powder, and everyday masala and little water to make a fine paste

Now add this paste to the kadhai

Fry for 5-7 mins 

  • Add curry leaves and continue to fry the mixture

  • Add hot water and tamarind juice 

  • Bring to a boil 

  • Cover and simmer for a few mins 

  • Add tadka of oil, red chillies, mustard seeds, shallot  and curry leaves to the curry

That’s it , your delicious Vegan fish curry (sans the fish) is ready 

  • Enjoy with rice
