Malvani Kombdi Vade - Malvani chicken curry and vade

Ingredients for Vade 

  • 2cups Shilpas Masala mill Special Thalipeeth (Bhajani) flour 

  • Little turmeric 

  • Little red chilli powder 

  • Salt to taste 

  • Hot water 

Instructions 

  • Mix the flour with the above ingredients adding hot water a little at a time

When it cools down knead with hand until smooth ( not too soft and not too hard )

Cover and leave aside for 3-4 hours 

  • Divide into  equal round balls

  • Take a plastic sheet or ziplock bag 

  • Wet the surface 

  • Add the dough ball and with a wet hand press on it to spread it into a poori shape ( not too thick or thin)

  • Heat oil for deep frying

  • Add the flattened dough into the hot oil and fry until golden on both sides. keep flame at medium.

  • DraiN, remove 

INGREDIENTS FOR MALVANI CHICKEN CURRY 

  • 1kg chicken,washed, cleaned curry cut 

  • Β½ tsp turmeric powder 

  • 2tbsp ginger, garlic, green chilli and coriander paste 

  • 3-4 tbsp Shilpas Masala mill Malvani masala 

  • Salt to taste 

  • 1-2 Onion, chopped

  • 1 Tomato, chopped 

  • 1-2 Bay leaf 

  • 2-3 tbsp  Vatan masala ( roasted dried coconut, garlic, ginger and onion paste) 

  • Coriander for garnish  

  • Oil 

INSTRUCTIONS

  • marinate the chicken with green paste, turmeric powder and salt for 1 hour

Heat oil in a kadhai 

  • Add bay leaf and onions 

  • Fry for few mins 

  • Add tomato and fry until softened 

  • Add Malvani masala and little water and fry masala until oil separates on the surface

Add chicken and fry for 2-3 mins

Cover and cook for 3-4 mins 

  • Add vatan masala

  • Add hot water to adjust consistency 

  • Cover and simmer for 8-10 mins until chicken is cooked 

  • Your chicken curry is ready

Serve hot with vade 

  • My lunch today was Kombdi vade with sol kadhi, rice  and koshimbir
