METHI MUTHIYA

Homemade Delicious Methi Muthiya ( Fried Dumplings made with Fenugreek leaves)
A traditional Gujarati tea time snack served with masala Chai and Chutney or a great addition to vegetables like Surti Undhiyo

Methi Muthiya

INGREDIENTS 

  • 2cups Methi( fresh fenugreek Leaves) washed and chopped

  • 2 tsp green chilly paste

  • 2 tsp garlic paste

  • 2 tsp ginger paste

  • Salt to taste

  • 2 tsp white  sesame seeds

  • 2 tbsp curd ( plain yogurt)

  • ½ tsp Hing( asafoetida)

  • ¼ tsp turmeric

  • 1 ½ tbsp sugar( granulated)

  • 1 ½ cup wheat flour

  • ½ cup besan( chickpea flour)

  • 2-3  tbsp oil

  • Oil for deep frying muthiya 

INSTRUCTIONS:

  • Wash, clean and chop the Methi vegetable 

  • Put in a bowl 

  • Add ginger, garlic and green chilly paste

  • Add salt, sesame seeds, Hing and turmeric 

  • Mix well

  • Add sugar and curd

  • Mix well with hand until sugar dissolves

  • Add 2 tbsp oil to the mixture

  • Mix well again

  • Now add the wheat flour and besan to the Methi mix

  • Mix with hand to form a dough

  • No water is needed as curd, Methi and oil have enough moisture to form the dough. If you really need, then just a few splashes of water would suffice.

  • Add another tsp of oil and knead dough further. The dough formed should be firm to touch( hard not too soft)

  • Cover and rest the dough for 15-20 mins

  • Grease your palms lightly and make muthiyas( cylindrical shape)

  • Heat oil for deep frying the muthiyas 

  • Oil should not be extremely hot as the muthiyas will brown quickly and  will not fully cook through

  • Fry muthiyas on low/ med flame 

  • Fry until brown and crispy.

  • Your delicious snack is ready
