POLLO GUISADO
Pollo Guisado.
Dominican, Puerto Rican chicken Stew.
An easy one pot recipe .. great for weeknight dinners.
Homemade Sofrito ( green grinding)
Homemade Puerto Rican Style Adobo Seasoning and Sazon.
Olives are missing in this stew as I didn’t have any at home.
INGREDIENTS FOR THE SOFRITO
½ onion
½ green bell pepper
½ bunch of cilantro ( stems included too)
5-6 peeled garlic
3-4 green chillies
INSTRUCTIONS
Blend all the ingredients ( use very little water only if required)
INGREDIENTS FOR THE PUERTO RICAN STYLE ADOBO SEASONING
1tsp chilli powder
1tsp garlic powder
1 ½ tsp cumin powder
2 tsp ground black pepper
2tsp oregano
1tbsp paprika
1-2 tbsp salt
OTHER INGREDIENTS:
2-4 lbs of chicken cut into pieces ( I’ve used Breast piece)
1 potato, peeled and cut into chunks
½ carrot cut into cubes
1-2 green chillies
2-3 tbsp Tomato paste
½ Chicken cube or chicken stock
Goya Sazon( not pictured)
I only had Achiote powder so I used that
Salt and pepper to taste
INSTRUCTIONS TO MAKE POLLO GUISADO
Season the chicken with homemade Adobo seasoning
Heat 1-2 tbsp oil in a large pot
Add chicken and fry it for 3-4 mins( just browning the pieces)
Remove and keep aside
In the same pan, add ½ cup of Sofrito mixture. Fry for few mins
Add tomato paste
Fry for few more mins
Now add the chicken cube, Goya Sazon salt, pepper, and 1tsp adobo seasoning
Add chicken
Add potatoes
Add 1-2 green chilies
Add enough water to cover and cook on low flame for 20-25 mins until chicken and vegetables are fully cooked and the sauce is slightly thickened
Adjust seasoning
Your delicious Puerto Rican Chicken Stew is ready
Garnish with coriander leaves.
