Bombay(CHICKEN) BIRYANI

INGREDIENTS for marinade

1 -1.5 kg chicken, cleaned and cut 

  • 30-40 gms Shilpas Masala mill Biryani Masala 

  • 1 tsp chilli powder 

  • 1 tsp Garam masala 

  • 1 -2 tsp Lemon juice 

  • 2 tbsp ginger garlic paste 

  • 150 gms Yoghurt 

  • Salt 

  • 150 -200 gms Fried onions 

INSTRUCTIONS 

Mix everything well and marinate overnight or at least for 1-2 hours

INGREDIENTS FOR GRAVY 

  • ½ cup ghee/oil 

  • 1 big cardamon 

  • ½ tsp Black cumin seeds (shahi jeera) 

  • Bay leaf 

  • 1-2 onion, sliced 

  • 3-4 tomatoes Tomatoes 

  • 4-5 green chillies 

  • Chopped mint 

  • Chopped coriander 

  • 1-2 potatoes, chopped into 4 or 8 pieces 

INSTRUCTIONS 

  • heat oil in a kadhai 

  • Add the dry spices 

  • Add onions and fry until golden

Add the marinated chicken and fry the mixture

Cover and cook for 3-4 minutes 

  • Add tomatoes and green chillies  and fry until oil separates on surface

Cover and cook for 2-3 minutes 

  • Add potatoes

Add mint and coriander leaves 

  • Add hot water and cover and simmer until chicken is tender

  • Adjust seasoning 

  • That’s it , your gravy is ready

INGREDIENTS FOR RICE 

  • 1.5 cups of long grain basmati rice, soaked for 1 hour 

  • Some whole spices

  • ½ tsp Shahi jeera

  • 1tbsp Lemon juice 

  • Ghee 

  • Salt 

  • Water 

INSTRUCTIONS 

  • Boil  water in a big pot 

  • Add whole spices, salt and lemon juice 

  • Add 1 tsp ghee too 

  • Add rice and cook until rice is 80 percent done

Drain and keep aside to use later 

LET'S LAYER THE BIRYANI AND GIVE DUM 

  • Use a heavy bottom pot 

  • Put the first layer of gravy and then add rice to it 

  • Now add chicken and gravy 

  • Add boiled eggs( optional) 

  • Sprinkle some biryani masala 

  • Add coriander leaves and mint leaves

Add fried onions 

  • Add little food colour mixed with milk 

  • Add a white layer of rice on top of the chicken 

  • Garnish with coriander leaves, mint leaves, fried onions, eggs, and little food colour( mixed in milk) 

  • Add 3-4 tsp ghee

Cover with a tight lid and give Dum on low flame for around 15-20  minutes 

  • And that’s it , your delicious Chicken Biryani is ready 

  • Serve with Raita, papad And achar
