BENGALURU SPECIAL DONNE BIRYANI (chicken biryani ) Indian RecipesRiceChickensouth indian recipes 28 Dec Written By Shilpa Anand INGREDIENTS for marinade1.5 kg chicken, washed, cleaned and cut 1tbsp of red chilli powder Pinch of turmeric2 tbsp ginger garlic paste 1 cup curd Salt to taste INGREDIENTS FOR THE SPICE PASTE 2-3 onions, sliced3-4 inch cinnamon8-10 cloves4-5 cardamon pods1tbsp peppercorn8-10 green chillies2 tbsp oilINGREDIENTS FOR GREEN PASTE 1 small bowl of mint leaves1 med bowl fenugreek leaves 1 large bowl coriander leaves1 tbsp oil INGREDIENTS FOR RICE 1 kg basmati rice ( original recipe needs jeera samba rice)1-inch cinnamon2-3 cloves6-7 cardamon1 mace 1-star anise½ tsp stone flower 1 tsp shahi jeera 1 bay leaf 2 tbsp Kasuri methi 1 small onion, sliced 5 tbsp ginger garlic paste Pinch of turmericSalt to taste Ghee 1 cup oil INSTRUCTIONSmarinate chicken with marinade and keep aside for 1-2 hrs( at least for 30 mins) Heat oil in a pan Add ingredients for spice paste and fry for a few mins Cool and grind to a paste with little water if required Now add oil to the pan Add green paste ingredients and fry for 2-3 minutes Cool and grind to a fine paste Now take a deep kadhai or vessel Heat up oil Add all the whole spices and fry for a min Add onions and fry Add ginger-garlic paste and turmeric and fry Add the marinated chicken Add spice paste and salt Cover and cook for 10-12 mins Add green paste and cover and cook until chicken is 70% cooked Add rice and enough water Bring to a boil Add lemon juice Cover and cook on high for 5 mins and then switch to med-low heat for 20-25 mins or until rice and chicken are done Add 2-3 tbsp of ghee That’s it, your Bengaluru SPL Donne Biryani is ready Serve hot with a boiled egg in a Donne bowl for an original experience Sides of Onions/lemon wedge and onion Raita SPICE LEVEL:🌶🌶 Shilpa Anand
