BENGALURU SPECIAL DONNE BIRYANI (chicken biryani )

INGREDIENTS for marinade

  • 1.5 kg chicken, washed, cleaned and cut 

  • 1tbsp of red chilli powder 

  • Pinch of turmeric

  • 2 tbsp ginger garlic paste 

  • 1 cup curd 

  • Salt to taste 

INGREDIENTS FOR THE SPICE PASTE

  • 2-3 onions, sliced

  • 3-4 inch cinnamon

  • 8-10 cloves

  • 4-5 cardamon pods

  • 1tbsp peppercorn

  • 8-10 green chillies

  • 2 tbsp oil

INGREDIENTS FOR GREEN PASTE

  • 1 small bowl of mint leaves

  • 1 med bowl fenugreek leaves 

  • 1 large bowl coriander leaves

  • 1 tbsp oil 

INGREDIENTS FOR RICE

  • 1 kg basmati rice ( original recipe needs jeera samba rice)

  • 1-inch cinnamon

  • 2-3 cloves

  • 6-7 cardamon

  • 1 mace 

  • 1-star anise

  • ½ tsp stone flower 

  • 1 tsp shahi jeera 

  • 1 bay leaf 

  • 2 tbsp Kasuri methi 

  • 1 small onion, sliced 

  • 5 tbsp ginger garlic paste 

  • Pinch of turmeric

  • Salt to taste 

  • Ghee 

  • 1 cup oil 

INSTRUCTIONS

  • marinate chicken with marinade and keep aside for 1-2 hrs( at least for 30 mins)

Heat oil in a pan 

  • Add ingredients for spice paste and fry for a few mins 

  • Cool and grind to a paste with little water if required

Now add oil to the pan 

  • Add green paste ingredients and fry for 2-3 minutes

Cool and grind to a fine paste 

  • Now take a deep kadhai or vessel 

  • Heat up oil 

  • Add all the whole spices and fry for a min 

  • Add onions and fry 

  • Add ginger-garlic paste and turmeric and fry 

  • Add the marinated chicken

Add spice paste and salt 

  • Cover and cook for 10-12 mins 

  • Add green paste and cover and cook until chicken is 70% cooked

Add rice and enough water

Bring to a boil 

  • Add lemon juice 

  • Cover and cook on high for 5 mins and then switch to med-low heat for 20-25 mins or until rice and chicken are done 

  • Add 2-3 tbsp of ghee

That’s it, your Bengaluru SPL Donne Biryani is ready 

  • Serve hot with a boiled egg in a Donne bowl for an original experience 

  • Sides of Onions/lemon wedge and onion Raita
