GINATAANG BILO BILO WITH LANGKA

This is a popular FILIPINO snack/dessert made with small glutinous rice balls and tapioca pearls in coconut milk. Few tubers and jackfruit is also added 

BILO BILO s origin is in Luzon, which is the northern Philippines island 

INGREDIENTS:

  • 3-4 cups water 

  • Pinch of salt 

  • ½ cup diced purple yam

  • ½ cup diced sweet potato

  • 2 small Saba bananas, sliced

  • ½ cup fresh jackfruit, sliced

  • 1can of coconut milk( 3 cups)

  • ½ cup glutinous rice flour

  • ¼ cup of water

  • ½ cup coconut sugar or white sugar or brown sugar ( brown sugar and coconut sugar make the BILO BILO brownish in color. I used white sugar as I love the lavender color) 

  • ½ cup cooked sago

INSTRUCTIONS

  • Heat water in a deep pot 

  • Add a pinch of salt 

  • Add yam and sweet potato and boil it for a few mins (70 % done) on low flame 

  • Add bananas 

  • Mix together the glutinous rice flour and water to make a soft dough-like consistency. Break off small dough and make into round balls

  • Add the small round rice balls into the boiling pot 

  • Add tapioca pearls and jackfruit

  • Add coconut milk and sugar

  • Continue to boil for 3-4 mins until rice balls float  to the surface and everything is soft and cooked

  • Adjust seasoning 

  • And that’s it, your super easy and tasty GINATAANG BILO BILO is ready

  • Serve hot or cold
