CHICKEN CURRY ANDHRA STYLE
This simple chicken curry called Kodi Kura is cooked in a gravy with minimum ingredients commonly found in most households. Every house in Andhra Pradesh has its own versions of this curry.
This is my Lockdown version

INGREDIENTS:
500 gms of boneless chicken ( with bones may be used) cut into pieces
¼ tsp turmeric powder
1-2 tsp chili powder
INSTRUCTIONS:
Marinate chicken with salt, turmeric and chili powder. Keep aside for 30-45 mins
INGREDIENTS FOR DRY GRINDING:
1.5-2 tsp coriander seeds
½ tsp cumin seeds
½ tsp fennel seeds
2 tsp poppy seeds
2-3 green cardamom
2-3 cloves
1inch cinnamon
INSTRUCTIONS:
Dry roast all the spices until aromatic
Cool and Dry grind these whole spices to a fine powder
Keep aside
INGREDIENTS FOR THE CURRY
1-2 onions finely chopped
1-2 tomatoes finely chopped
2-3 green chilies, slit
1tbsp ginger paste
1tbsp garlic paste
Few curry leaves
2-3 tbsp Oil
Salt to taste
Hot water
INSTRUCTIONS:
Heat oil in pan/ kadhai
Add green chilies, onion, and few curry leaves
Add ginger and garlic paste
Fry these on med heat until onion turns brown
Now add the marinated chicken
Fry for 5-6 mins
Add the prepared spice powder
Fry for another 1-2 mins
Add tomatoes
Add salt
Cover and cook on low heat until tomatoes soften. The masala should coat the chicken pieces well and oil should be visible on the surface
Now add hot water
Mix and cook covered for 10-15 mins or until chicken is cooked
Adjust seasoning if needed
And that’s all, your simple and easy Andhra Style chicken curry is ready
Serve hot garnished with coriander leaves
Enjoy with rice and Rotis
Note for variations
Dried coconut can be added to the spice powder
Cashew nuts can be added
