VEG LASAGNA

INGREDIENTS TO MAKE PASTA ( tomato) SAUCE

  • 3 tomatoes, grated or puréed 

  • ½ onion, chopped

  • ¼ capsicum chopped

  • Salt

  • Sugar

  • Chilli flakes

  • Basil leaves

  • 2-3 tbsp tomato paste 

  • 1tbsp tomato ketchup 

  • 1-2 tbsp garlic 

  • Black pepper powder 

  • Chilli powder

  • Mixed herbs ( optional) 

  • 1tbsp oil 

INSTRUCTIONS 

  • heat oil in a pan and add onions and garlic

  • Add chilli flakes and then add the grated tomato 

  • Simmer and cook covered for few mins

  • Add other ingredients and continue to simmer until sauce thickens and oil is visible on the surface 

  • Check to season and that’s it , your pizza/ pasta sauce is ready 

INGREDIENTS FOR BECHAMEL SAUCE

  • 50 gms butter

  • 50 gms plain flour 

  • 500 ml whole milk

  • Mixed herbs

  • Black pepper 

  • Salt and pinch of sugar 

  • Cheese( optional) 

INSTRUCTIONS 

  • melt butter in a pan and then add the flour

  • Stir continuously until a paste form ( this is called a roux) cook for 2-3 mins

  • Add milk to the roux gradually and continue to stir until a smooth sauce is formed

  • Add salt, pepper, sugar and mixed herbs 

  • Cook for 5-10 mins until the sauce is thickened and add cheese 

  • Mix and switch off the flame 

  • That’s it, bechamel is ready 

VEGETABLES

  • ½ zucchini, cut

  • ¼ carrot, cut

  • 5-6 Brocolli florets 

  • ½ onion, cut

  • 5-6 mushrooms, sliced

  • ¼ cup boiled corn 

  • 1cup spinach, steamed and drained

  • ½ Bell pepper, cut 

  • Salt

  • Pepper

  • Chilli flakes

  • 1-2 tbsp Butter 

  • 1tbsp garlic

INSTRUCTIONS

  • melt butter in a pan and sauté garlic and all vegetables 

  • Add all seasoning and cook for 4-5 mins( no need to fully cook vegetables as we will bake them later)

  • I mixed some bechamel sauce with the spinach and kept it separate from the veg mix. You may choose to mix all vegetables together 

OTHERS

  • 9 Lasagna sheets, boiled and ready for use 

Let’s PUT IT TOGETHER 

  • Take an ovenproof dish 

  • Layer with pasta sauce 

  • Place 3 strips of lasagna on it

  • Pour pasta sauce and spread it evenly

  • Add vegetables

  • Add bechamel 

  • Layer with 3 more lasagna sheets 

  • Add spinach and bechamel

  • Add mozzarella cheese 

  • Again top it off with 3 more lasagna sheets 

  • Add pasta sauce, bechamel and mozzarella cheese 

  • Add a few basil leaves

  • Cover loosely with foil and bake in a preheated oven at 180 C for 25-30 mins

  • Remove foil and bake an additional 10-15 mins to allow the cheese to brown 

  • Remove from oven and Stand the lasagna for 10 mins before serving

That’s it, your delicious exotic vegetable lasagna is ready
