DUDHI KE THEPLE

INGREDIENTS 

  • 1cup wheat flour

  • ½ tbsp besan 

  • 1cup grated dudhi ( Lauki, bottle gourd)

  • 2 tsp ginger garlic and green chilly paste

  • 1tsp sesame seeds

  • Pinch of hing

  • ¼ tsp ajwain ( carrom seeds)

  • 1tbsp oil

  • Salt to taste

  • ½ -1tsp sugar

  • Chopped coriander 

  • Chopped green garlic( optional) 

  • 1tbsp malai or cream  ( Dahi can be used instead of or increase the amount of oil if not using Dahi or malai) 

  • Ghee 

INSTRUCTIONS:

  • Mix everything in a bowl

  • Knead to make a stiff dough

  • Keep aside for ½ hour ( can keep overnight in the fridge to make fresh theplas in the morning for breakfast )

  • Remove from fridge 

  • Roll into small roundels 

  • Roll out into roti shape and thickness

  • Roast on tavaa (flat pan) on both sides applying ghee

  • And that’s it, your easy and delicious dudhi Theplas are ready 

  • Enjoy with chutney and khatta mittha nimboo ka achaar
