SOOJI KA HALWA (BHANDARE WALA SUJI KA HALWA) dessertsIndian RecipesIndian Festival SweetsVegetarian recipeseggless desserts 22 Apr Written By Shilpa Anand Ingredients 2-21/2 cup boiling hot water ( depending upon your rava) ½ cup sooji ( Rava) 2tbsp besan ½ cup Ghee½ -¾ cup SugarCashews, almonds( fried in ghee and then chopped) Few strands of Saffron ( soaked in hot water) Green elaichi powderSmall Pinch of salt ( optional ) Orange food colour ( optional) INSTRUCTIONS Dry roast the sooji for 3 mins on low med flame Add besan and continue to dry roast for another 3 mins. Continuously keep stirring the mixture Now add ¼ cup ghee and continue to fry until you get the desired golden colour. Fry for another 2-3 mins Add hot boiling water and continue to stir Be careful at this stage to avoid accidents Add saffron,food colourThe halva will cook and become dry Now add sugar and continue to stir Sugar will dissolve and halva will become thinner Now add remaining ghee ( reserving a little to add in the end )Add nuts ,elaichi powderAdd ghee and mix well Add a pinch of salt That’s it , your delicious Bhandare Vala sooji ka halwa is ready I’ve served it with Sookhe Kale Chane , wholewheat puris and alu ki subji Shilpa Anand
