SALLI PER EEDA EggsBreakfastIndian RecipesParsi cusine 29 Aug Written By Shilpa Anand PARSI STYLE EGGS ON POTATO Crispies/straws INGREDIENTS 3-4 eggs 1cup sali + garnishing 1tbsp oil1green chilli ,finely chopped1inch ginger ,finely chopped1 medium onion, finely chopped1 medium tomato , finely chopped¼ tsp turmeric powder1 tsp red chilli powder½ tsp cumin powder1 tsp coriander powder½ tsp Dhansak masala ( optional) Salt to taste1tbsp fresh coriander , choppedINSTRUCTIONS HEAT oil in a panAdd green chillies,ginger and onion and sauté until onion turns goldenAdd tomatoes and mix Add all the powdered spices and saltCook for 10 mins until tomatoes are softenedAdd ½ cup water , mix and cook for 1-2 mins Add salli and mix gently.spread it out evenly in the pan Add little chopped coriander Make wells in the mix and add the raw eggs Sprinkle some salt and cover and cook for 3-4 mins ( until eggs are cooked to your liking) That’s it, your Delicious Salli per EEDA is ready Serve hot garnished with some salli and coriander leaves Enjoy Shilpa Anand
