NYONYA KAPITAN CHICKEN CURRY
INGREDIENTS
4-6 whole chicken( 1 kg) drumsticks, marinated in turmeric and salt for 2-4 hrs
250 coconut cream or 500 ml coconut milk
Water
Potatoes( optional)
Kaffir lime leaves, sliced fine
⅓ cup Oil
Fried shallots for garnish
Gula Melaka or sugar
Salt
SPICE PASTE
6-8 small Shallots
3-5 cloves of Garlic
2cm Ginger
4cm Galangal
1-2 tbsp of Shilpa's Masala Mill chicken /mutton masala
4-6 Fresh red chilli
½ tsp Turmeric or fresh turmeric
1-2 stalks of Lemon grass(white part only)
½ -1 tsp Shrimp paste
¼ tsp turmeric powder
1 tbsp Baba meat curry powder
4Candlenuts or 2-3 cashew
INSTRUCTIONS
grind the spice paste ingredients to a slightly coarse paste adding water as needed
Heat oil in a saucepan
Add spice paste
Fry until oil separates on surface
Add kaffir lime leaves and lemon grass
Add chicken and fry the mix for a few minutes
Add water, and simmer for 15-20 mins on low flame
Add coconut cream/milk and continue to simmer for another 15-20 mins
Add Gula Melaka,and salt
That’s it, your delicious NYONYA Kapitan Chicken curry is ready
Garnish with chopped kaffir lime leaves, sliced red chillies and fried shallots and enjoy with rice and roti parathas
