INGREDIENTS 

¼-½ kg Suran, cubed, pan-fried

1onion, finely sliced 

INSTRUCTIONS 

  • Heat pan 

  • Add sliced onion and dry roast for a few minutes 

  • Now add 1 tsp oil and continue to roast 

  • Add dry coconut and roast until golden brown

Add cumin seeds and roast for a min 

  • Cool the mix and then grind to a fine paste

Heat oil in a kadhai 

  • Add bay leaf, chopped onions and fry 

  • Add ginger-garlic paste 

  • Add Malvani Masala and Sambhar Masala and mix well.

Add the yam and mix

Add water and bring to a boil 

  • Add the ground paste

add kokum 

  • Add salt and simmer covered for 10-12 minutes 

  • That’s it, Malvani Suran chi AAMTI is ready

Garnish with coriander leaves and enjoy with rice,bhakri
