Adjust water. Cool and keep aside. Discard the bouquet garni. Heat oil in a potAdd bay leaf, green chili, and onions. Fry for 3-4 minsAdd ginger-garlic paste and fry for 2-4 mins Add potatoes, red chili powder and fry for 3-4 mins Add tomato purée and continue to fry Add salt,chole masala, garam masala, and kasuri methi and fry until oil separates on surface Add yogurt and mix well Fry for few more mins until everything incorporates well Add the boiled Chana Adjust seasoning and cover and cook for few mins until potatoes are almost done and oil is visible on sidesAdd soaked rice Add mint leaves, coriander leaves Adjust waterCover and Dum cook for 12-16 mins or until rice is cookedAnd that’s it Your wholesome and delicious aloo Chole Dum pulao is ready Garnish with fried onions, coriander, and mint leavesServe with Raita and papad SPICE LEVEL: 🌶🌶 Shilpa Anand
