BARBEQUE CHICKEN RICE RiceChickenMiddle EasternIndian Recipes 29 Jan Written By Shilpa Anand INGREDIENTS for CHICKEN MARINADE 1cup yogurt, beaten1tsp garam masala1tsp red chilli powder1tsp chilli flakes1tsp cumin powder1tsp coriander powder1tsp Kashmiri chilli powder1tsp Salt 1tsp lemon juice ¼ tsp black pepper¼ tsp turmeric powder1tsp Ginger paste 1tsp Garlic paste1kg boneless chicken1-2tbsp oil (1piece charcoal for smoking )INSTRUCTIONS Marinate the chicken and leave aside for 1 hr Heat oil and cook the chicken until water evaporates and oil is visible (At this point you can use the charcoal to give the chicken a smoky flavour) Remove and keep aside INGREDIENTS for mixed veg: 1tbsp garlic, chopped½ tbsp ginger julienned ½ green chilli pepper½ cup cucumber, cut 1tbsp vinegar Oil 2cups shredded cabbage ½ cup sweet corn, boiled ½ cup spring onions1bell pepper, cut½ carrot, cut 1tsp black pepper, crushed1tsp red chilli flakes1tbsp soya sauce INSTRUCTIONSHEAT oil in a panFry garlic, ginger and chillies and cucumber Add vinegar and fry for 30 secs Add rest of the vegetables and sauté for few mins Add soya sauce, chilli flakes and black pepper Do not overcook vegetablesRemove and keep aside INGREDIENTS FOR RICE 1-2 tbsp OILI tbsp chilli flakes 1tbsp garlic, chopped 2cups Rice washed, soaked ½ tsp salt Coriander leaves, chopped 1tsp chicken powder INSTRUCTIONS heat oil in a pot Add garlic and chilli flakes and fry for 1 minAdd rice, chicken powder, salt and water Cook until rice is done Add chopped coriander INGREDIENTS FOR SAUCE 1cup Mayonnaise 1tbsp Chilli garlic sauce 2tbsp ketchup ½ tsp Black pepper, crushed 1tbsp water if neededINSTRUCTIONSMix everything together PUT IT TOGETHER TAKE a serving dish Add rice Add vegetables as the second layer Add the chicken Add coriander Lastly, drizzle the prepared mayonnaise That’s it, your party pleaser chicken BBQ rice is ready Serve hot SPICE LEVEL: 🌶 Shilpa Anand
