Easy Eggless Chocolate cake

INGREDIENTS 

  • 1 ½ cup maida 

  • ¾ cup cocoa powder

  • ½ tsp baking soda

  • 1tsp baking powder

  • ¾ cup oil

  • 1 ½ cup castor sugar 

  • 1cup Greek yoghurt

  • ½ tsp vanilla extract 

  • ½ cup buttermilk ( ½ cup milk + 1tsp vinegar .. rest for 10-15 mins ) 

  • Pinch of salt 

  • ½ tsp coffee( optional)

INSTRUCTIONS

  • Preheat oven to 180c

  • Whisk cocoa , flour,salt,baking powder, baking soda into a bowl

Beat together oil and sugar until light and pale 

  • Add yoghurt and vanilla and whisk at low

Add flour to wet ingredients alternating with buttermilk 

Start and end with flour

  • Do not over mix

  • Pour batter into a pan and bake for 35-40 mins or until toothpick comes out clean

You can divide the batter into 2 pans to make a two  layered chocolate cake  

  • Remove, cool and enjoy 

  • I’ve made an icing with butter , sugar, cream and cocoa powder
