EGGLESS COCONUT COOKIES

INGREDIENTS

  • ⅔ cup ( ⅓ cup x2) all-purpose flour 

  • 1cup desiccated coconut 

  • ½ tsp baking powder

  • ½ cup butter ( softened) 

  • ⅔ cup ( ⅓ cup x2)  powdered sugar( icing sugar)

  • ½ tsp salt 

INSTRUCTIONS

  • Cream the sugar and butter

  • Add all other dry ingredients 

  • Mix to form a dough ( if the dough is too dry add 1-2 tsp of milk) 

  • Cover and chill for ½ hour

  • Divide into 18-20 equal parts 

  • Roll into a cookie shape and slightly flatten them 

  • Then gently coat them in desiccated coconut 

  • Transfer to a baking tray 

  • Bake at 170 c for 15-17 mins( until golden) 

  • Leave on a rack to cool
