CHATPATI ARBI

CHATPATI ARBI

This vegetarian/ vegan Colocasia dish is simply irresistible. It can be enjoyed with Rotis or can even be enjoyed as a chaat.

INGREDIENTS

  • 7-10 Arbi ( colocassia roots, boiled and peeled)

  • ½ cup rice flour

  • 1medium onion chopped

  • 2-3 green chillies

  • 10 -12 curry leaves

  • ½ tsp coriander powder 

  • ½ tsp cumin powder 

  • 1tsp chaat masala

  • 1-2 tsp red chilli powder 

  • 1-2 tsp of coriander chutney ( recipe in another blog)

  • 2-3 tbsp oil 

NOTE: In the picture above I’ve only used 5-6 Arbi . I’ve adjusted the ingredients accordingly for the recipe

INSTRUCTIONS

  • Heat 1-2 tbsp  oil in pan 

  • Flatten the boiled Arbi gently with your palm

  • In a plate add the rice flour and salt. Mix well

  • Add Arbi to the flour mixture and coat well

  • Shallow fry Arbi until golden and crisp

  • Remove and keep aside for use later

  • In another kadhai , heat up 1-2 tbsp oil

  • Add curry leaves and onion

  • Fry for few min until onions turn slight golden colour 

  • Add green chillies

  • Add salt

  • Mix well

  • Fry for 1-2 mins

  • Now add the Arbi 

  • Add powdered  spices

  • Sauté gently until masala coats the Arbi 

  • Add chutney and mix well

  • Fry for another 1-2 min

  • Garnish with coriander leaves

  • Your delicious spicy , CHATPATI ARBI is ready to be served hot
