SOYA CHUNK CURRY - KERALA BEEF CURRY STYLE

This spicy delicious Soya Chunks curry is a variant of the famous Kerala Beef Curry for those who are vegetarian or vegan. The texture of the pressure cooked soya chunks imitate that of beef or mutton.
Enjoy with coconut rice.

INGREDIENTS:

  • Soya chunks - 100 gms

  • Onion - 1 big  chopped

  • Tomato - 1 big chopped

  • Ginger -1 inch (paste)

  • Garlic - 7-8 cloves (paste)

  • green chilies - 2-3

Powders:

  • Turmeric powder -½ tsp

  • Kashmiri red chili powder -1 tbsp

  • Coriander powder - 2 tbsp

  • Garam masala powder - 1 tbsp

  • Fennel seed powder -½ tsp 

Tadka:

  • Coconut  oil - 2  tbsp

  • Fenugreek seeds -¼ tsp

  • Fennel seeds -½ tsp

  • Curry  leaves -10-12

  • Fresh coriander - 1 tbsp roughly chopped

  • Black pepper powder-1 tsp

Garnish:

Coriander leaves

Instructions:

  1. Soak soya chunks in hot water for half-hour

  2. Drain and squeeze chunks to remove excess water.

  3. In a pressure cooker add half the quantity of onions and tomatoes. Then add ginger garlic paste, green chilies, and salt. 

  4. Add a little turmeric, coriander powder, garam masala, fennel seed powder, and salt.

  5. Then add soya chunks and water and pressure cook for 3 - 4 whistles

6) Heat oil in a pan 

7) Add fenugreek seeds and fennel seeds

8) Add the remaining onion and sauté for 3-4 mins.

9) Add curry leaves and coriander leaves 

10) Then add tomatoes and sauté for 3-4 mins until the onions and tomatoes become soft.

11) Add pepper powder and mix well.

12) Now add the cooked soya chunks to the pan. Mix well

13) Adjust seasoning 

14) Cook until gravy thickens

15) Garnish with coriander leaves and serve hot.
