VEGETARIAN TUTTI FRUTTI CAKE

INGREDIENTS 

  • 1.5 cups of all-purpose flour( maida), sieved 

  • 1cup Dahi(yogurt) 

  • ¾ cup -1cup granulated white sugar 

  • ½ cup oil 

  • 1 ¼ tsp baking powder

  • ½ tsp baking soda

  • 1tsp vanilla essence 

  • ½ cup tutti frutti

  • 1tbsp raisins( optional) 

  • Pinch of salt 

INSTRUCTIONS

  • PREHEAT oven at 180 c

  • In a small bowl mix the tutti frutti and raisins with 1 tbsp of maida. This helps the tutti frutti to be evenly spread out in the cake and avoids sinking at the bottom

In a medium bowl mix together Dahi and sugar. Combine it well

  • Now add baking soda and baking powder and leave it aside for 5-10 mins

  • Add vanilla extract, a pinch of salt and oil to the Dahi mix

  • Now add the maida ( slowly in batches) 

  • Mix well with spatula 

  • Do not overmix 

  • Add the tutti frutti and raisin mix

  • Combine it well

  • Pour the batter in a greased loaf pan

Bake at 180c for 45-50 mins or until tooth pick inserted in centre comes out clean

  • Remove from oven and cool the cake on a cooling rack 

  • Cut into slices and that’s it.. your delicious, soft vegetarian Tutti Frutti cake is ready
