JACKFRUIT CURRY

INGREDIENTS 

1 young raw jackfruit, cleaned and cut into chunks. Keep these pieces in diluted coconut milk while we prepare the masala

1tsp fenugreek seeds, roasted and powdered

1onion, chopped or grated 

  • 2-3 pods Garlic, chopped

  • Ginger, chopped

  • Green chillies, slit 

  • 1-2 tbsp coconut  oil 

  • 1tsp cumin seeds

  • Curry leaves

  • Pandan leaves( not featured) 

  • 2tbsp chilli powder 

  • 1tsp turmeric powder

  • 1cinnamon stick 

  • 2-3 cloves 

  • 3tbsp roasted curry powder 

  •  1can Coconut milk 

  • ½ -1tomato, chopped or grated 

  • 1-2 Goraka / Kokum 

INSTRUCTIONS

  • HEAT coconut oil in a kadhai ( earthenware pot is best) and add cumin seeds, ginger, garlic and onion

  • Fry for few mins and add the green chillies, cloves, curry leaves  and cinnamon

Add all powdered masalas and continue to fry ( add little water if required) 

  • Add tomato purée, Goraka And salt   and fry

Add the jackfruit pieces and fry the mix for 3-4 mins

Then add the diluted coconut milk and let it simmer for 30 -45 mins ( at this point as I was in a rush I pressure cooked this mix for one whistle and then transferred it back to the kadhai

Add the thick coconut milk and simmer for another 20 -30 mins 

  • That’s it, your young jackfruit curry is ready 

  • Serve with rice and chapati
