Keep these pieces in diluted coconut milk while we prepare the masala 1tsp fenugreek seeds, roasted and powdered 1onion, chopped or grated 2-3 pods Garlic, choppedGinger, choppedGreen chillies, slit 1-2 tbsp coconut oil 1tsp cumin seedsCurry leavesPandan leaves( not featured) 2tbsp chilli powder 1tsp turmeric powder1cinnamon stick 2-3 cloves 3tbsp roasted curry powder 1can Coconut milk ½ -1tomato, chopped or grated 1-2 Goraka / Kokum INSTRUCTIONSHEAT coconut oil in a kadhai ( earthenware pot is best) and add cumin seeds, ginger, garlic and onionFry for few mins and add the green chillies, cloves, curry leaves and cinnamon Add all powdered masalas and continue to fry ( add little water if required) Add tomato purée, Goraka And salt and fry Add the jackfruit pieces and fry the mix for 3-4 mins Then add the diluted coconut milk and let it simmer for 30 -45 mins ( at this point as I was in a rush I pressure cooked this mix for one whistle and then transferred it back to the kadhai Add the thick coconut milk and simmer for another 20 -30 mins That’s it, your young jackfruit curry is ready Serve with rice and chapati SPICE LEVEL:🌶🌶 Shilpa Anand
