TZATZIKI
INGREDIENTS:
½ cup plain Greek yogurt ( or hung curd)
1tbsp fresh dill chopped
½ tsp mint leaves chopped
1-2 clove garlic, minced
½ cucumber
¼ tsp salt
¼ tsp black pepper
1-2 tsp lemon juice
¼ tsp Cayenne pepper
INSTRUCTIONS:
Grate the cucumber, add a pinch of salt and leave aside for 10 mins. Then gently squeeze the cucumbers ( or use sieve) to separate the liquid from the cucumber.Discard the cucumber juice or use in another recipe. U can even drink the juice ( no wastage ) Separating the juice from the cucumbers helps the Tzatziki to remain creamy ( not runny)
Add the cucumber to the Greek yoghurt
Add minced garlic and cayenne pepper, salt and black pepper
Add freshly squeezed lemon juice
Add chopped mint and dill
Stir the yoghurt
Taste and adjust seasoning
Chill in refrigerator for at least 2-3 hours before serving (overnight is good too)
Transfer to a serving bowl and garnish with dill leaves. Sprinkle black pepper and cayenne pepper.
Your delicious dip is ready
