TENDLI SAMBHARIYA

This recipe is really easy and quick to prepare. It’s cooked with fresh ingredients like mint, coriander, and coconut along with minimal spices.

INGREDIENTS:

  • 250 gms of tendli ( ivy gourd)cut lengthwise 

  • 1tsp cumin seeds

  • 1tbsp sesame seeds

  • 1-2 tbsp peanuts or walnuts, coarsely crushed

  • Chopped coriander leaves

  • ½ cup grated fresh coconut

  • ½-1 tsp sugar

  • 1-2 green chilies 

  • 10-12 fresh mint leaves, chopped

  • 1tbsp coriander powder

  • ¼ tsp turmeric powder

  • 1tsp red chili powder 

  • ¼ tsp mango powder or lemon juice 

  • Salt to taste

  • Pinch of hing

  • 2-3 tbsp oil 

INSTRUCTIONS:

  • Heat oil in a pan 

  • Add cumin seeds and hing  and allow them to splutter

  • Add chopped green chili

  • Add sesame seeds

  • Add tendli and fry for 1-2 mins 

  • Cover and cook for few mins

  • Mix together in a bowl the peanuts, coriander, coconut, mint leaves, salt, and sugar.

  • Keep aside

  • Check tendli and stir it a bit

  • Cover and continue to cook for 3-5 mins

  • No water is needed for cooking the tendli. It should brown a bit 

  • Add the coriander powder, turmeric powder, and chili powder

  • Fry for 3-4 mins more

  • Add the previously prepared masala to the tendli. Add the mango powder

  • Mix well and adjust seasoning 

  • Switch off gas

  • And that’s it, your easy and healthy Tendli Sambhariya is ready

Enjoy with bhakris or Rotis
