It’s cooked with fresh ingredients like mint, coriander, and coconut along with minimal spices.Kids would love it tooINGREDIENTS: 250 gms of tendli ( ivy gourd)cut lengthwise 1tsp cumin seeds1tbsp sesame seeds1-2 tbsp peanuts or walnuts, coarsely crushedChopped coriander leaves½ cup grated fresh coconut½-1 tsp sugar1-2 green chilies 10-12 fresh mint leaves, chopped1tbsp coriander powder¼ tsp turmeric powder1tsp red chili powder ¼ tsp mango powder or lemon juice Salt to tastePinch of hing2-3 tbsp oil INSTRUCTIONS:Heat oil in a pan Add cumin seeds and hing and allow them to splutterAdd chopped green chiliAdd sesame seeds Add tendli and fry for 1-2 mins Cover and cook for few minsMix together in a bowl the peanuts, coriander, coconut, mint leaves, salt, and sugar. Keep asideCheck tendli and stir it a bitCover and continue to cook for 3-5 minsNo water is needed for cooking the tendli. It should brown a bit Add the coriander powder, turmeric powder, and chili powder Fry for 3-4 mins more Add the previously prepared masala to the tendli.
