BLACK PAV BHAJI

This is the newest trend in Mumbai Street Foods. It is not your ordinary Pav bhaji, the addition of Dry Charred coconut takes this version of Pav bhaji to an elevated level.

INGREDIENTS FOR THE BLACK SPICE MIX

½ Dry coconut

  • 1tsp Black peppercorns

  • 2 Black stone flower (dagad phool)

  • 1tsp Fennel

  • 1 black Cardamom, broken 

  • ½ tsp Cloves

  • 1Cinnamon stick 

  • 2 bay leaves

  • 1tbsp coriander seeds

  • ½ tsp cumin seeds 

  • 10 slices of dry coconut 

INSTRUCTIONS 

  • Roast the dry coconut on high flame until charred and black. Keep aside

  • Dry roast all other spices until aromatic and browned

Cool 

  • Grind all the spices with the charred coconut to a fine powder ( do not use any water)

OTHER INGREDIENTS 

  • ½ cup onions, chopped

  • 2-3 potatoes, boiled and grated

  • 1medium Capsicum

  • ¼ cup carrots 

  • 2-3 Tomatoes, chopped 

  • ½ cup fresh Green peas, cooked 

  • ½ cup florets Cauliflower, boiled  

  • Ginger garlic paste 

  • Coriander leaves

  • 2-3 tbsp Butter 

  • 1 tbsp Regular Pav bhaji masala 

  • 1-2 cups of water 

INSTRUCTIONS

  • Heat up butter in a pan and sauté onions and, ginger garlic paste for 2-3 mins

Add tomatoes and sauté well until pulpy

Add vegetables and mix well

Add Pav bhaji masala and 2-3 tbsp of prepared black masala and salt

Fry well 

  • Add water and simmer for 6-8 mins until desired thickness

Add butter and Garnish with chopped coriander and that’s it 

  • Your unique black Pav bhaji is ready

Serve hot with butter-fried Pav, chopped onions and lemon
