SURTI PETIS

INGREDIENTS FOR OUTER LAYER 

  • 2boiled potatoes, grated 

  • 2tsp all-purpose flour ( maida) 

  • 3tsp cornflour 

  • Salt 

INSTRUCTIONS 

  • Mix all the ingredients well until it forms a dough-like consistency

INGREDIENTS FOR STUFFING

½ cup fresh coconut 

  • 2tbsp boiled grated potato 

  • 2tbsp gram flour papdi ( crushed ) or gathia crushed 

  • 1tsp fennel seeds, crushed

  • 1inch Ginger grated

  • 2tsp green chilly paste 

  • 1tbsp sesame seeds

  • 2-3 tsp powdered sugar 

  • 3tbsp fresh coriander 

  • 1tbsp pomegranate ( optional)

  • 1tsp raisins 

  • ¼ tsp garam masala 

  • Salt to taste 

  • ½ lemon juice 

  • Oil for frying 

INSTRUCTIONS 

  • Add coconut, potato, crushed  besan papdi, fennel, ginger , chilly paste, sesame seeds, sugar, coriander leaves, pomegranate, raisins,garam masala,salt and lemon juice in a bowl

Add poha if stuffing is wet 

  • Mix everything well 

  • Make small lemon size  balls 

  • Stuff them in the potato outer layer

Smoothen it and coat it in cornflour well 

  • Heat oil and deep fry on medium until it turns brown, keep stirring to get an even colour

Serve hot with green chutney And fried green chilly
