SURAN KI BIRYANI (YAM BIRYANI)

Ingredients for grinding

1star anise 

  • ½ mace 

  • 1- 2cinnamon sticks 

  • 1black cardamom 

  • Small piece of nutmeg 

  • 1-2 bay leaves 

  • ½ tsp caraway seeds 

  • 5-6 green cardamom 

INSTRUCTIONS 

  • Fine grind everything to form powder form OR use Shilpa’s Masala Mill Special Biryani Masala

OTHER INGREDIENTS 

  • 1bay leaf

  • ¼ tsp caraway seeds 

  • 2-3 green cardamom 

  • 1kg yam ,peeled,cut into chunks 

  • 1-2 potatoes 

  • ½ cup Oil 

  • 1cup Tomato purée 

  • 1tsp  red chilli powder

  • ½ tsp cumin powder 

  • ½ tsp coriander powder

  • ¼ tsp turmeric powder 

  • 1tsp kasoori Methi 

  • Salt to taste 

  • 2-3 dried prunes  or chaat masala 

  • 1-2 tbsp Ginger garlic green chilli paste 

  • 1cup Fried onions 

  • 2cups rice ,soaked 

  • Water 

  • Coriander leaves , chopped 

  • Mint leaves ,chopped 

  • 2-3 green chillies 

  • Kewda essence( optional) 

  • Food colour ( optional) 

INSTRUCTIONS 

  • boil soaked rice with excess water until rice is 70-80 % done. Drain rice and keep aside to use later.Discard water or u may use it to rinse your hair🥰

  • Heat oil in kadhai 

  • Add bay leaf, caraway seeds and green cardamom. Fry for a min 

  • Add yam and fry for few mins 

  • Add chili powder , coriander powder, cumin powder , salt, turmeric powder,kasuri Methi,garam masala and chaat powder. Add ginger garlic and chilly paste

Add potatoes 

  • Bhunao the yam and potatoes  with masalas

  • Add 1tbsp water and continue to bhunao

  • Add the ground spice mix. Reserve 1tsp for use later 

  • Continue to bhunao by adding little water again 

  • Add tomato purée and some of the fried onions 

  • Bhunao for 3-4 mins then add enough water to cook the yam and potatoes ( 90% done)

Add kewda essence 

  • Add coriander leaves, mint leaves and green chillies 

  • Remove half mixture to layer the biryani 

LETS LAYER THE BIRYANI 

  • add half rice over the yam and potatoes mix

  • Add coriander leaves, mint leaves and green chilies

  • Add fried onions 

  • Sprinkle the reserved ground masala 

  • Add the reserved gravy and layer with rice again

Garnish the rice again with fried onions, ground masala ,coriander leaves 

  • Add food colour( if desired)

Cover and give Dum for 10-12 mins 

  • That’s it,your delicious vegetarian, vegan Yam Biriyani is ready

Serve hot with papad, boondi Raita and salad
