SAMBAL IKAN BILIS (with fried potatoes)

INGREDIENTS FOR COARSE GRINDING 

  • 3-4 shallots 

  • 4 cloves  garlic

  • 12 dry red chillies, soaked in water  

OTHER INGREDIENTs 

  • Oil

  • 2potatoes, thinly sliced 

  • 100 gms anchovies

  • 200 gms raw  peanuts 

  • 3-4 pieces of galangal 

  • 2tbsp white sugar 

  • 3tbsp palm sugar 

  • ⅓ cup tamarind juice 

  • 1tbsp vinegar

  • ¼ tsp chicken cube 

  • Salt 

INSTRUCTIONS 

  • Add salt to potatoes slices and keep aside 

  • Strain to use

Heat oil and deep fry the potatoes until crisp and brown

Fry the anchovies in the same oil until golden

Fry peanuts

 Coarse grind onions, dried and soaked red chillies

Add the ground paste to oil and fry

Add sugar, palm sugar, tamarind, vinegar, chicken cube and salt 

  • Add the peanuts and fry 

  • Add anchovies and fried potatoes

Mix well until evenly coated 

  • That’s it

Serve with rice and other accompaniments
