SALLI PER EEDA

PARSI STYLE EGGS ON POTATO Crispies/straws

INGREDIENTS 

  • 3-4 eggs 

  • 1cup sali + garnishing 

  • 1tbsp oil

  • 1green chilli ,finely chopped

  • 1inch ginger ,finely chopped

  • 1 medium onion, finely chopped

  • 1 medium tomato , finely chopped

  • ¼ tsp turmeric powder

  • 1 tsp red chilli powder

  • ½ tsp cumin powder

  • 1 tsp coriander powder

  • ½ tsp Dhansak masala ( optional) 

  • Salt to taste

  • 1tbsp fresh coriander , chopped

INSTRUCTIONS 

  • HEAT oil in a pan

  • Add green chillies,ginger and onion and sauté until onion turns golden

  • Add tomatoes and mix

Add all the powdered spices and salt

  • Cook for 10 mins until tomatoes are softened

  • Add ½ cup water , mix and cook for 1-2 mins 

  • Add salli and mix gently.spread it out evenly in the pan

Add little chopped coriander 

  • Make wells in the mix and add the raw eggs

Sprinkle some salt and cover and cook for 3-4 mins ( until eggs are cooked to your liking)

That’s it, your Delicious Salli per EEDA is ready 

  • Serve hot garnished with some salli and coriander leaves 

  • Enjoy
