VEGAN FRIED CALAMARI RINGS
These delicious vegan fried Calamari rings are made from King Oyster Mushroom or Eryngii. Eryngii mimic the taste and texture of Calamari to perfection. They are crispy outside and chewy on the inside. It’s perfect as an appetizer, snack , beer pairing or party food. This is by far the best vegan calamari you have ever had.
INGREDIENTS:
1 large King oyster mushroom or Eryngii
INGREDIENTS FOR THE BATTER:
3tsp cornstarch
1-2 nori sheets
½ cup all purpose flour
1tsp chilli powder
½ tsp onion powder
1tsp garlic powder
Salt to taste
½ tsp black pepper powder ( not pictured)
1 cup Panko or bread crumbs mixed with salt and red chilli powder
INSTRUCTIONS:
1) Mix all the ingredients for batter with water (dipping consistency)
2) Keep aside
3) Next cut the stems of the mushroom into discs and core out the centre with a cookie cutter to make it look like rings.
4) You can use the heads of the mushroom either in another recipe or cut them into strips to add to this dish.
5) In another bowl , mix together the breadcrumbs chilli powder and salt.
6) Keep aside
7) Dip the vegan calamari rings in the prepared batter and then transfer them to the breadcrumbs bowl. Gently coat the rings on all sides. Shake out the excess mixture. Keep aside.
8) Heat oil (for deep frying) to at least 350f or 375f
9) Deep fry the vegan calamari rings for 3-5 mins or until golden brown
10) Drain and place on absorbent paper towel to reduce excess oil.
11) Don’t overcook as mushrooms cook very quickly
12) Your vegan fried calamari is ready
13) Serve hot with wedges of lime and spicy mayonnaise (mix vegan mayonnaise with Sriracha or any spicy chilli paste with a dash of lime and a hint of sugar)
