KAJU KATLI Indian RecipesdessertsVegetarian recipeseggless dessertsDiwali dessertsindian desserts 7 Dec Written By Shilpa Anand Ingredients1cup sugar or 200 gms ¾ -1cup water 2cups cashew ⅓ cup milk powder ( optional) 1-2 tsp Ghee Saffron/rose water /silver foil(optional)INSTRUCTIONSfreeze cashews for 3-4 hours prior to grinding Grind the cashews ( pulsing motion) to powder form Sieve the mixture to get a fine powder ( optional step) Mix milk powder in the mixture Take a non-stick pan and add sugar and water to itHeat the pan to dissolve the sugar mix in the cashew powder and continuously keep stirring mix 1-2 tsp ghee Keep stirring until it forms into a soft dough-like consistency. You know it’s ready when u take a small portion of the dough and roll it into a ball in between your fingers easily without stickiness. Cool for a few mins and transfer onto butter paper ( I didn’t have so used a greased thali) Roll out using a rolling pin or with a hand Add silver foil / Kesar etc Let it cool for at least 2-3 hours in room temp ( not fridge) And you are festive ready, your Kaju Katli is done cut into diamond shapes and enjoy Shilpa Anand
