PUDINA (MINT) CHUTNEY - SOUTH INDIAN STYLE

South Indian style Pudina ( Mint ) Chutney with Coconut. This quick and delicious Pudina Chutney is perfect as a side dish for Idlis or Dosas.

Pudina ( Mint ) Chutney with Coconut.
This quick and delicious Pudina Chutney is perfect as a side dish for Idlis or Dosas.

INGREDIENTS:

  • 1tsp Urad dal

  • 2 tsp Chana dal

  • 3-4 green chillies

  • 2-3 pieces of ginger

  • ¼ cup Shallots or small onion 

  • Pinch of Hing

  • 1tsp tamarind paste or small ball of tamarind 

  • ½ cup mint leaves

  • 2 tbsp of fresh grated coconut

  • Salt to taste

  • 1tbsp Oil

INSTRUCTIONS:

  • Heat oil in a pan

  • Add urad dal and Chana dal( keep med heat)

  • Fry for 2-3 mins( until color changes slightly)

  • Add green chilies and Hing

  • Fry for a minute

  • Add ginger and shallots. Fry for 2-3 mins

  • Add tamarind and the mint leaves

  • Sauté for 1-2 mins

  • Add fresh coconut and sauté for 1-2 mins(no need to brown the coconut)

  • Add salt 

  • Switch off flame and cool the mixture

  • Grind  to smooth paste adding little water

  • Your pudina chutney is ready 

TO TEMPER ( baghar)

  • Heat 1 tsp oil 

  • Add ½ tsp mustard seeds. Allow them to crackle.

  • Add urad dal

  • Add 1-2 dry red chilies

  • Pour this over the prepared pudina chutney
