PUDINA (MINT) CHUTNEY - SOUTH INDIAN STYLE
INGREDIENTS:
1tsp Urad dal
2 tsp Chana dal
3-4 green chillies
2-3 pieces of ginger
¼ cup Shallots or small onion
Pinch of Hing
1tsp tamarind paste or small ball of tamarind
½ cup mint leaves
2 tbsp of fresh grated coconut
Salt to taste
1tbsp Oil
INSTRUCTIONS:
Heat oil in a pan
Add urad dal and Chana dal( keep med heat)
Fry for 2-3 mins( until color changes slightly)
Add green chilies and Hing
Fry for a minute
Add ginger and shallots. Fry for 2-3 mins
Add tamarind and the mint leaves
Sauté for 1-2 mins
Add fresh coconut and sauté for 1-2 mins(no need to brown the coconut)
Add salt
Switch off flame and cool the mixture
Grind to smooth paste adding little water
Your pudina chutney is ready
TO TEMPER ( baghar)
Heat 1 tsp oil
Add ½ tsp mustard seeds. Allow them to crackle.
Add urad dal
Add 1-2 dry red chilies
Pour this over the prepared pudina chutney
