MUMBAI STREET STYLE MUSHROOM PAV BHAJI

INGREDIENTS for Bhaji

50-60 gms butter 

  • Oil 

  • Cumin seeds 

  • 2-3 onions, chopped

  • 1-2 Capsicum, chopped

  • 3-4 Tomatoes, chopped

  • 5-6 potatoes, boiled and mashed lightly 

  • ½ cup Boiled green peas 

  • 1small cauliflower, boiled with turmeric and salt 

  • ½ beetroot ( small), boiled and grated 

  • Bunch of Coriander leaves, chopped 

  • ½ cup Garlic cloves, grind with water to make garlic paste 

  • 10-12 Kashmiri red chillies, deseeded, soaked in water and then grind to make red chilli paste 

  • 2-3 tbsp of Shilpa’s Masala Mill Pav Bhaji masala 

  • 1tsp Kasuri methi 

  • 1tbsp of coriander powder 

  • 1tbsp green chilli paste 

  • ½-1 tsp Lemon juice 

INSTRUCTIONS 

  • Heat a tavaa or flat bottomed pan 

  • Add oil + butter 

  • Add cumin seeds and onion and fry until translucent 

  • Add capsicum and fry for 1-2 mins on high flame 

  • Now add the rest of the vegetables, pav bhaji masala, coriander powder,kasuri methi, green chilli paste and salt

Mix well and break( smash)the vegetables 

  • Now add the garlic paste and red chilli paste and continue to mix well with the help of a potato smasher

Add hot water and keep smashing bhaji with a potato smasher

Keep flame to low- med 

  • Adjust consistency to your liking and seasoning if required

  • Add butter

LET'S MAKE MUSHROOM TADKA 

  • 4-5 mushroom ( big) , diced 

  • Butter 

  • Pav bhaji masala 

  • Coriander leaves 

  • Salt 

  • Red chilli paste 

  • Garlic paste 

INSTRUCTIONS 

  • heat up a pan and add all the ingredients

Sauté until mushrooms are cooked

That’s it , mushrooms are ready

LET'S MAKE RED CHILLI GARLIC CHUTNEY 

INGREDIENTS 

  • 2-3 tbsp of oil 

  • 1tsp cumin seeds 

  • ½ cup red chilli paste 

  • ½ cup garlic paste 

  • 1tsp pav bhaji masala 

  • Lemon juice 

  • Kala namak or Salt 

INSTRUCTIONS 

  • heat a pan with oil and add cumin seeds 

  • Add all other ingredients and cook on med heat until oil separates on the surface of the chutney 

  • Your red chilli garlic chutney is ready 

LET'S PREPARE THE PAV 

  • slit pav in halves, keeping ends attached 

  • Heat up tavaa with butter 

  • Add red chilli garlic chutney and coriander leaves 

  • Place pav on tavaa making sure the butter coats the pav completely 

  • Cook for a few mins 

  • That’s it Pav is ready 

Let's Serve MUSHROOM PAV BHAJI 

  • Add the mushroom  tadka to the prepared pav bhaji 

  • Add butter and coriander leaves 

  • Serve this hot with Pav, chopped onions, lemon wedge and red chilli garlic chutney

That’s it, your special Mushroom Pav Bhaji is ready
