SOUFFLÉ PANCAKES WITH HOMEMADE BERRY COMPOTE AND CREAM October 10, 2020 Shilpa Anand INGREDIENTS2eggs2tbsp sugar ¼ cup cake flour ¼ tsp baking powder11/2 tbsp milk¼ tsp vanilla extract ½ tsp white vinegar 1 tbsp OilWater for steaming TOPPINGS of your choice butterWhipping creamBerry compote(sugar, berries and orange juice)Maple syrup INSTRUCTIONSSeparate egg yolks and egg whitesWhisk egg yolks in a medium bowl Add milk, vanilla and beat the mixture until frothy and thick Sieve flour and baking powder and add into the egg yolk mixtureWhisk to combine thoroughly but do not overmix Whisk egg white with sugar and vinegar into a meringue ( light and fluffy) Add a scoop of egg white meringue to egg yolk batter and mix until well incorporatedNow carefully add the remaining egg white meringue to the yolk batter and fold gently making sure not to break air pockets in egg whitesHeat pan at the lowest heatGrease with oil Take a scoop of batter and add onto the panAdd another scoop on top of it Sprinkle few drops of water into the pan, cover immediately and let it steam cook for 2-3 minsOpen the lid of the pan and add another scoop of batter on top of the existing pancake Cover and cook another 2-3 minsFlip over and cover and cook another side for 2-3 mins( add few drops of water to create steam again) That’s it.. your super soft and fluffy soufflé pancakes are ready Remove and serve immediately with all your favourite toppings.Enjoy
