MASOOR DAL AUR BAINGAN January 15, 2022 Shilpa Anand INGREDIENTS 1 cup masoor dal, soaked 1eggplant( baingan) choppedFew green chillies1-2 onions, chopped2-3 tomatoes, chopped 2tsp ginger garlic paste Red chilli powderCoriander powderCumin powder Salt to taste Turmeric powder Garam masala powder 1-2 tbsp Dahi ( optional) or amchoor powder Coriander leaves, chopped for garnish Mustard Oil Water INSTRUCTIONSheat oil in a kadhaiAdd onion and ginger-garlic paste and fry until translucent Add tomatoes and continue to fry until softened Add powdered masalas and fry for a few more minutes Add dahi and mix well Add eggplant and fry for 1-2 minutes Add masoor dal and water and mix well Cover and simmer on low flame until daal is completely softened Give tadka with ghee, green chillies, jeera,hing and Kashmiri red chilli powder Garnish with coriander leaves and that’s it Serve it hot with rotis, rice SPICE LEVEL:🌶
