MANGALORE STYLE CUCUMBER IDLI (sauthekayi idli) STEAMED IN TURMERIC LEAVES

INGREDIENTS 

  • 1cup cucumber , grated

  • 1cup idli rawa( suji)roasted for 1-2 mins

  • ¼ cup scraped fresh coconut

  • 2 tbsp Curd 

  • Salt to taste 

  • Water as needed 

  • Few turmeric leaves , 

  • thread to tie the leaves (optional)

  • Oil 

  • 1tsp mustard seeds

  • 2tsp urad dal 

  • 1-2 green chillies , chopped 

  • ¼ cup fresh coriander , chopped 

  • ½, tsp Baking soda 

INSTRUCTIONS 

Mix the rawa,salt, cucumber and curd. Allow to rest for 20-30 mins

Make tadka with oil , mustard, urad dal and green chilli 

  • Add to the cucumber mix 

  • Add coconut and coriander

Add  baking powder just before steaming 

  • Take small portions and transfer i between the turmeric leaves

Fold the leaves and tie with string 

  • Steam for 15-20 mins

  • That’s it , enjoy your aromatic turmeric leaves steamed cucumber IDLI with coconut chutney and sambhar 

  • I ran out of turmeric leaves hence had to use parchment paper too.

  • The sambhar was eggplant  sambhar made with my SHILPAS MASALA MILL  sambhar powder
