MALVANI EGG CURRY

INGREDIENTS 

  • ½ cup dry coconut ,sliced 

  • ¼ cup fresh coconut 

  • 1inch Ginger,sliced

  • 2onions,sliced 

  • 4-5 garlic 

  • 5boiled eggs ,lightly fried in chilli oil

1onion,finely chopped

  • 1tomato ,finely chopped 

  • 1raw egg

  • 2tbsp Shilpa’s Masala Mill Malvani Masala

  • ¼ tsp turmeric powder

INSTRUCTIONS 

  • dry roast the dry coconut until brown.keep aside 

  • Dry roast the fresh coconut until slightly brown 

  • Add oil to pan and sauté the onion,Garlic and ginger until brown

Cool and keep aside 

  • Grind the dry coconut, fresh coconut and onion mix to a fine paste with water

Heat oil in kadhai

  • Add chopped onions and fry them until golden

Add tomato and continue to fry 

  • Add malvani masala and turmeric powder and sauté until oil separates 

  • Add 3-4 tbsp of ground coconut paste and fry

Add salt 

  • Add 1-2 cups water and simmer 

  • Add a raw beaten egg and stir it well 

  • Continue to simmer 

  • Add the boiled eggs and simmer for another 5 mins

Add coriander leaves and cover and simmer for 5 more mins 

  • That’s it ,your delicious Malvani Anda curry is ready

Enjoy with Bhakri and rice
