MAHARASHTRIAN VAANGI BATATA SUKAT BHAJI

INGREDIENTS:

1cup sukat ( dried prawns), cleaned , roasted, washed and soaked in water for 10-15 mins 

  • 2 onions , chopped

  • ½ -1tomato , chopped 

  • 1potato , diced 

  • 2 brinjals( eggplants) ,cut 

  • 1-2 green chilies, chopped

  • 1tsp ginger garlic paste 

  • 1tbsp Shilpa’s Masala Mill Everyday masala 

  • 1 tsp Shilpa’s Masala Mill Special Goda masala 

  • ½ tsp coriander powder

  • ½ tsp cumin powder

  • ¼ tsp turmeric 

  • 1-2 pinch of hing

  • 2-3 kokum ( or lemon juice ) 

  • Salt to taste 

  • Oil 

  • Chopped coriander leaves for garnish 

INSTRUCTIONS

  • Heat oil in kadhai

  • Add hing, green chilies and onion. Fry for few mins

Add ginger garlic paste and fry 

  • Add tomato and continue to fry 

  • Add coriander powder, cumin powder, turmeric , everyday masala and goda masala

Add the kokum 

  • Now add potatoes and brinjals 

  • Add the fried prawns and salt

Fry for 1-2 mins 

  • Add water and cover and cook until done 

  • Fry for few more mins

Garnish with coriander leaves
