LYCHEE BAKED YOGURT

This delicious, easy, and vegetarian lychee baked yogurt is a refreshing summer dessert. It is prepared with very few ingredients which are cream, strained yogurt (Dahi), condensed milk, and lychee puree. Baked, cooled, and ready to impress.

 

INGREDIENTS:

  • Yogurt - 1 cup

  • Lychee - 15 pieces

  • Condensed milk - 2 tablespoons

  • Cream - ¼ cup

cream + milk
 

GARNISH:

  • Lychee pieces

  • Slivered almond

  • Pistachios

  • Rose petals

INSTRUCTIONS:

  1. Strain the yogurt in a sieve for around 20 - 30 minutes

  2. Blend the lychees to a rough puree

  3. Use the strained yogurt, the liquid may be used for making other recipes

  4. Mix the condensed milk with the yogurt

  5. Add fresh cream and the lychee puree and mix well. If your mix becomes very watery you can use 1 tablespoon of cornflour to the mix, this will help to set your dessert

  6. Transfer the mix into oven proof bowls, fill until ¾ of the bowl and cover with foil

7) Add water to the baking tray and transfer the bowls to it

8) Preheat the oven to 160°C

9) Bake at 160°C for 15 minutes

10) Allow it to cool completely

11) Refrigerate for 5 - 6 hours

TO SERVE:

 Remove the foils and garnish with the slivered almonds, pistachios and rose petals. Enjoy it chilled!
