KHATKHATE

Khatkhate
This is a traditional and delicious recipe consisting of various vegetables and Tuvar daal flavored with minimal ingredients like coconut and teppal. This vegetarian stew is without ginger, garlic, onions and Oil ( u heard me). Made especially during Ganesh festival on Rishi Panchami. Khatkhate is healthy vegetarian vegan and if Tuvar dal is skipped , it’s also a keto friendly dish.
Served hot with rice

INGREDIENTS:

1cup cooked Tuvar dal 

1 tablespoon of cooked white peas

VEGETABLES:

  • Sweet potatoes - 5-6 cubes

  • Potato -5-6 cubes

  • Eggplant ( baingan ) - 5-6 cubes

  • Lauki ( bottle gourd ) - 5-6 cubes

  • Radish - 5-6 cubes

  • Arbi ( colocassia) - 5-6 pieces

  • Sweet corn - 3-4 pieces

  • Carrots - 5-6 cubes

  • Pumpkin -5-6 cubes

  • French beans - 3 or 4 beans cut into small pieces

NOTE:

  • You can add any vegetables of your choice like tendli ( ivy gourd), ridge gourd,gavar ( cluster beans), raw banana or drumsticks except Bhindi ( lady’s finger ) and Karela ( bitter gourd)

VATAN MASALA GRIND:

  • ½ cup fresh grated coconut 

  • 3- 4 dry red chilies

  • ¼ tsp haldi

  • Lemon sized tamarind soaked in water or tamarind paste

  • 1tbsp jaggery ( depending on how sweet you like the dal.. this dal is tangy, sweet and spicy)

Soak 10 - 12 teppal ( triphal ) in water for 15 - 20 mins. Crush them lightly before adding them in khatkhate

INSTRUCTIONS:

  • Add dal in a large pot 

  • Add vegetables and salt. Add water Cover and cook until vegetables are 60 % cooked

  • Add the ground Vatan masala 

  • Add teppal and continue to boil until vegetables are fully cooked

  • Adjust seasoning

  • Can add Kokum in the end to sour taste is desired.

    Khatkhate is ready!

Serve hot with rice or chapatis.
