INSTANT VEGETABLE RAVA IDLIS - SOUTH INDIAN STYLE

South Indian Rava Idlis ( sooji, semolina)
Rava Idlis are steamed cakes made with semolina , yoghurt and vegetables.
Rava Idli is a variation of the popular South Indian breakfast dish Idlis which are traditionally made with fermented lentils and rice batter.
These soft , spongy melt in the mouth Rava Idlis are Served hot with delicious homemade Sambar , pudina chutney and red onion chutney.

INGREDIENTS:

  • 1 cup rava (suji, semolina)

  • ½ cup curd ( Dahi , yoghurt)

  • 1tsp mustard seeds

  • 1tbsp Oil

  • 1tsp Urad dal

  • Few curry leaves( roughly cut)

  • Few coriander leaves(chopped)

  • 1-2 dry red chillies

  • Salt to taste

  • 1tsp Eno fruit salt 

  • 1cup water

  • ¼ cup Carrots (grated)

  • ¼ cup beans finely chopped

INSTRUCTIONS:

  • Heat oil in pan

  • Add mustard seeds and allow them to crackle

  • Add urad dal,dry red chillies( broken)and curry leaves

  • Sauté until Urad dal turns light brown

  • Add the Rava

  • Roast for 4-5 mins on med low heat , stirring all the time

  • Then add vegetables and broken curry leaves

  • Switch off the heat and allow to cool down completely

  • Transfer to another bowl and add the curd to it.

  • Mix it well

  • Add ¾ cup water, mix well until there are no more lumps (water quantity may depend upon the quality of your Rava)

  • Cover the mixture and set aside for 15-20 min

  • After 20 mins check on the Rava batter. The batter will be thick as Rava absorbed the water. Add the remaining ¼ cup water and mix well

  • The batter should be thick, flowing consistency

  • Add salt

  • Combine everything well

  • Now add the Eno fruit salt and mix well

  • Pour batter immediately to greased idli mould and steam for 10-12 mins on medium-high heat

  • Remove from steamer and allow to cool down

  • Remove the Idlis from mould

Your instant Rava Vegetable Idlis are ready!

Enjoy them hot with Sambar, pudina chutney and red onion chutney
