HOMEMADE VEGETARIAN MACARONI AND CHEESE

INGREDIENTS

  • 1cup cooked elbow macaroni or any other pasta. Reserve some cooked pasta water for use later 

  • 2-3 cloves of garlic , chopped 

  • ½-1  onion, chopped

  • ⅓ cup canned Tomato paste 

  • 1tsp Chilli flakes

  • ½ tsp Oregano or mixed herbs

  • ½ tsp black pepper 

  • 1tsp red chilli powder

  • Sugar ( optional) 

  • 2 tbsp Olive Oil 

  • ½ Chicken cube ( optional) 

  • ½ cup Cream 

  • ½ cup milk 

  • ½ cup mozzarella cheese 

  • ½ cup cheddar cheese 

  • 1tbsp butter 

  • Parsley for garnish 

INSTRUCTIONS

  • heat oil in pan 

  • Add garlic and onion and fry for a minute 

  • Add chiili flakes, tomato paste,mixed herbs,black pepper,salt,red chilli powder  and sugar 

  • Fry for 2-3 mins. Add reserved pasta water if required 

  • Add milk and cream and simmer covered for few minutes

  • Add boiled macaroni and adjust consistency with the reserved water if needed

  • Add cheese and mix well

  • Simmer for 2-3 mins

  • Add butter 

  • That’s it ,your homemade Mac And Cheese is ready 

  • Garnish with parsley 

  • Enjoy hot with garlic bread
