HEALTHY VEGAN BEETROOT AND MASOOR DAL CUTLETS ( PATTIES, TIKKIS) September 12, 2020 Shilpa Anand This is a healthier version of the standard beetroot cutlet with either potatoes or bread crumbs. I’ve used grated raw beetroots along with soaked whole brown lentils and oats flour to make the tikkis.This beetroot cutlet is vegetarian, vegan and low carb… INGREDIENTS 1-2 beetroots, peeled and grated 1 onion chopped1cup whole brown lentils or Akha Masur dal, soaked for at least 4-6 hours 1-2 tbsp Oats flour ( dry grind the oats in a mixer)Coriander leaves, chopped1tsp Chilli powder or smoked paprika 1-2 tsp Chaat masala1tsp Shilpa’s Masala Mill Garam masala1-2 green chilli2-3 Garlic cloves1inch Ginger Salt to tasteOil for fryingINSTRUCTIONS:Drain and grind the masoor dal with green chilli, coriander leaves, ginger, garlic and salt to a coarse paste. Do not add any water Mix together other ingredients in a large bowl Add the dal paste and oats flour Now mix everything wellAdjust seasoning and consistency Roll into cutlet shape Heat oil Shallow fry the tikkis on low until crispy on both sides, turning them occasionally. It took me almost 20 mins on low flame to cook the tikkis. You can use an air fryer or oven to cook the cutlets. Serve hot with green chutney, ketchup and homemade chipotle sauce I’ve used this cutlet to make burgers for dinner. I’ve served these burgers with sweet potato French fries and homemade spicy Chipotle sauce NOTE:you can choose to cook the lentils slightly before coarse grinding them. Make sure to use very little water while doing so or else the mixture will be wet in consistency You can choose to cook( grill or boil) the beetroots before grating them too.If your batter is too wet, you can add bread crumbs or boiled potatoes. Other vegetables like grated carrots, beans, zucchini may also be added to the beetroot mixture INGREDIENTS FOR HOMEMADE CHIPOTLE SAUCE ½ bowl Mayonnaise½ tsp Garlic, minced¼ tsp Red Kashmiri chilli powder½ tsp Red chilli flakes½ tsp red chilli powder 1 tsp Vinegar1tsp Lemon juice 1-2 tsp Ketchup1 tsp mixed herbsSalt to tasteINSTRUCTIONSMIX everything in a bowl and adjust seasoning... that’s it.. your 5 min Homemade Chipotle sauce is ready.SPICE LEVEL:🌶
