DURBAN’S FAMOUS BUNNY CHOW

Bunny Chow is a popular  South African Street Food consisting of a hollowed-out bread filled with curry. This originated in the large Indian Community of Durban, on the Eastern Coast of South Africa. The term Bunny is a variation from the word “Bania” an Indian Class of Traders who invented and sold this unique and potable dish.

I’ve made it with chicken but any kind of protein like lamb, beef, mutton is fine too.

INGREDIENTS FOR CHICKEN CURRY

I kg chicken, curry cut 

  • 2 onions chopped

  • 2 potatoes, chopped

  • 2-3 chillies, sliced

  • 2-3 tomatoes, purée or 1can tomato paste

  • 5-6 garlic, chopped

  • 2-3 bay leaves

  • 3-4 cardamom 

  • 400-500ml chicken stock

  • ½ cup oil

  • Water 

  • Salt 

INGREDIENTS FOR DRY SPICE MIX

  • 2 tsp ginger powder

  • 2tsp coriander powder

  • 1-2 tbsp meat curry powder 

  • 1tsp cumin powder

  • 2 tsp Shilpa’s Masala Mill Kashmiri chilli powder

  • 1tbsp red chilli powder OR Shilpa’s Masala Mill Chicken/Mutton Masala

  • 1tsp fennel powder

  • ¼ tsp cloves powder

  • ½ tsp garlic powder

  • ½ tsp cinnamon powder

INSTRUCTIONS

  • HEAT oil in a deep pot

  • Add garlic, bay leaf and cardamom

  • Add chicken and fry for 2-3 mins

  • Add onions

  • Add the dry  spice mix and salt

Add sliced chillies and fry for 2-3 mins

Add tomato purée and chicken stock

  • Cover and slow cook for at least 30 mins or until chicken is 70% done

  • Now add potatoes and cover and continue to cook for another 20-30 mins

Oil should be visible on the surface

And you are done, your Durban style chicken Curry is ready 

SERVE 

  • TAKE bread or buns

  • Slice off the top and core out the centre 

  • Now serve the chicken curry in this bread garnished with coriander leaves and mixed salad

PS: It is recommended to eat this dish with your hands

If using lamb or beef or mutton, add star anise and mustard seeds to spice paste. Also, slow cook the meat for a longer time than chicken.
